I took a trip to Hoi An once and tried the famous chicken rice. I’ll never forget the flavor—it was so tender, moist, and delicious.
An easy dish cooked in one pot, usually a steamed or poached chicken.
Gà Hội An / Hoian-style Chicken
INGREDIENTS:
1 whole chicken (preferably organic)
3 shallots, peeled and cut in half
2 inch ginger, peeled and sliced thin
2 cups rice, washed
1 Tbsp, ground turmeric
1 carrots, shredded
1 daikon, shredded
1/4 papaya, sliced thin
Vietnamese coriander
Salt, pepper, sugar
3 chilli
DIRECTIONS:
For the chicken
1. Place chicken with white parts of green onions and ginger and cover with cold water in a medium-sized pot.
2. Bring to a boil and then lower to simmer. Skim the top to clear out the scum and keep the broth clear.
3. When the chicken releases clear juices after poking, it’s done. Remove the chicken and turn off heat.
4. Once the chicken is cool enough to handle, tear off the meat and put the bones back into the broth, letting it simmer while the rice is cooking.
6. Season the broth with salt and pepper to your taste.
For the rice
1. Wash and drain rice.
2. Stir-fry the rice in the garlic oil until grains tighten, then add turmeric juice for color.
3. Transfer rice to a cooker, add chicken broth (less water than usual), and cook.
4. Allow the cooked rice to rest for 10-15 minutes after it's done cooking before using a fork to separate and fluff the grains.
For the chicken salad
Mix chicken breast meat with soaked onions, a teaspoon of lime juice, a teaspoon of fish sauce, half a teaspoon of salt, a teaspoon of sugar, a pinch of pepper, and chopped coriander.
For the carrot and papaya salad
Drain the soaked papaya and carrots; add spices.
For the sauce
1. Start by frying shallots, then add the marinated chicken intestines and cook.
2. Next, pour in chicken broth, adjust seasoning to taste, and finally, remove the intestines before serving.
FINAL PRODUCT:
- Press rice into a bowl tightly, then overturn onto a wide plate.
- Arrange sliced chicken thighs, chicken salad, chicken intestines, sweet and sour papaya, and laksa leaves.
- Top with fragrant fried onions. It is served with intestine sauce and a bowl of chicken broth garnished with scallions.
The vibrant yellow rice is fragrant and fluffy, complemented by soft chicken, sweet and sour papaya, and savory intestine sauce.
